Being a post-op patient this past week has been filled with frustrations & challenges.  I could not have made it without all the help and encouragement I received.  I was blessed to be able to have both my mom and my mother-in-law staying with me for different parts of last week.  They did such an amazing job of taking care of me!  I don’t know what I would have done without them. 

After a weekend of pizza and grinders one of the their greatest gifts to me was some delicious home cooked meals.  At this point in my recovery I could barley stand up long enough to make toast and so I was thankful that just because I was not in kitchen someone was.

Since I was not doing much cooking this week I thought I would share a recipe that my mother in law made for us on her final night here.  It was a big hit!  It was over 80 degrees that day and our apartment was sweltering.  There was absolutely no way we could stand turning on the oven.  Luckily, she had this teriyaki beef recipe to make in the crock pot.

Ingredients

2 tablespoons olive oil (if you have sesame oil use 1 tablespoon of each)
1/2 cup soy sauce
1 teaspoon ground ginger
1 tablespoon sugar
2 cloves crushed garlic
3 tablespoons onion
2 lbs top round beef, sliced thin

Slice meat and add to crock pot.  Mix all other ingredients together in small bowl and pour over meat.  Cook on high for 1 hour. Stir.  Turn to low and cook for another 2-3 hours. 

Serve with rice and vegetables.
